What You’ll Need:

  • 3 large avocados, halved, peeled, and pitted
  • 32 oz box vegetable broth
  • ¼ cup onion, finely chopped
  • 1 liter butter
  • ½ tsp salt
  • 1 cup light cream (or half-and-half)
  • Sour cream to taste
  • Hot pepper sauce (optional)

Instructions to Make the Best Avocado Soup:

  • Blend together 2 cups of vegetable broth with the three avocados until smooth.
  • In a large saucepan, cook the diced onion in butter for 3 to 4 minutes, until the onion is tender.
  • Add the avocado mixture to the saucepan with the cream, salt, and remaining broth. Cook over medium-low heat until mixture is just heated through, but not boiling, while stirring occasionally. 
  • If desired, add hot sauce to taste.
  • Serve immediately hot or cover and chill to serve cold. Top with cream, crispy tortilla pieces, and chopped avocado or red onion, if desired.

  • 2 6-inch corn tortillas
  • ½ cup vegetable oil
  • Salt

Directions

  • Cut tortillas into ¼-inch wide strips.
  • In a small pan, heat vegetable oil over medium heat until hot. 
  • Add ¼ of the tortillas strips to the oil and cook until golden brown.
  • Remove the strips from the oil with a slotted spoon, placing them on a paper towel to dry.
  • Repeat the previous 2 steps for the rest of the tortilla strips, then sprinkle all of them lightly with salt.
