DAY 7 – 30DaysOfAvoToast: The Greek One

Many of you must have heard the Mediterranean diet is super healthy; you can live longer and not gain as much weight as other countries do. Why is that? Besides olive oil, Mediterranean cuisine doesn’t involve many superfoods, and large portions are plentiful. The key here is that a combination of vegetables, fruits, beans, whole grain bread, some white meat, dairy products, and healthy fats (like avocado of course) play a big role in dishes.

Another key is that the cultural emphasis on homemade, from-scratch meals cuts out many processed foods. Though we all enjoy a big slice of pizza and TV during our meals, this isn’t a common evening in the Mediterranean countries! So start your healthy (and super yummy) new eating routine today with this amazing Greek AvoToast.

The Greek One: AvoToast with Grilled Aubergine, Feta, and Olives

Instructions

STEP 1
Preheat oven to 180° C (350° F). Put aubergine slices on baking sheet and then olive oil and some salt and pepper on it.

STEP 2
Bake aubergine for 8 Minutes, flip over and bake for another 5 minutes or until they are a little brown.

STEP 3
Toast your bread.

STEP 4
Mash avocado with salt, pepper and some finely cut garlic.

STEP 5
Put avocado on toast and put two baked aubergine slices on top. Sprinkle with feta cheese, olives, and olive oil.

Ingredients
  • 2 slices of whole grain toast
  • 1/2 avocado
  • 1/2 clove of garlic
  • 4 slices of aubergine (1 cm thick)
  • Some feta cheese
  • About 10 olives
  • Salt and pepper to taste
